Pasta with Peas and Ham
This is one of my wife’s favorite dishes. It is so simple yet the taste is unbelievable. It takes you back to when you were in mom’s kitchen.
Serves 2
Ingredients: ½ onion
extra virgin oil
2 oz cooked ham
¼ pint heavy cream
7 oz pasta (I recommend tortellini or fresh fettuccine)
4 oz green peas
1 cup parmesan
salt and pepper to taste
a hint of nutmeg (a little goes a looooong way)
Directions: Fry the onion in the oil in a large skillet, then add the peas and cook for 15 minutes. Add the cream and continue cooking until the sauce gets thicker. Add salt, pepper and a hint of nutmeg.
Meanwhile, boil the pasta and when al dente, drain it and pour into the skillet with the cream sauce, mixing it enough to coat the pasta. Grate the parmesan onto the pasta (at the end), give a nice mix, and bring it to the table.
