Food like wine should be served at correct temperature.
There is nothing more deceiving when you go out for dinner in a restaurant, when they serve the food not at the correct temperature, like worm dishes served cold. But the worse for me happens often with salads. I mentioned this already for the caprese salad. To really enjoy it, it should be served at room temperature. Instead very often it comes out directly from the fridge and the mozzarella so cold remains attached to your teeth. I like to navigate around the web and see how many for me wrong cooking advises are given. Look for example at the many carpaccio’s on many recipes that tell you to keep the meat or the fish for a long time in the fridge. The original Harry’s bar from Venice meat carpaccio recipe, tells you to keep it just for five minutes. Dear reader for me fresh fish carpaccio should never stay inside the fridge. I don’t pretend to be wright and so i leave the judgment to you. Try the same recipe and keep one half in the fridge and the other half out, and than try to compare. In case you really do please let me know your opinion.
