For this recipe I used a hen but a chicken is also good. This is the typical meal we have usually in families for the Sunday. The important is to cook the chicken well but not drying it. I used a hen for the taste but also because it is smaller and until now we are only two in the family. Also for this dish the potatoes get very tasty as they absorb the juices from the chicken.
Ingredients
One hen, one small onion, one laurel leaf, rosemary, garlic, salt and pepper, olive oil .
Two tea spoons each of oil, white wine and lemon juice
Recipe
Lay the chicken in an oven tray previously oiled with the potatoes. Stuff it with the onion laurel and rosemary and garlic with salt and pepper. Cook for about one hour. During the cooking with a brush distribute the oil, the wine and the lemon juice mixed together.
To make it special instead of oil you could use lard
