3 eggs        1/2 teaspoon baking powder
1/2 cup sugar
3/4 cup flour

3 tablespoons melted shortening

Break eggs into upper part of double boiler, beat enough to mix, add sugar and place in boiler over hot water (just below the boiling point) . Beat with Dover beater for fifteen minutes or until very light. Remove from heat and quickly add dry ingredients and shortening alternately. Bake in a shallow pan that has been greased and floured. Let pastry, stand in pan upside down for twenty-four hours. Cut in fancy shapes and decorate. This is often called butter sponge cake and is the pastry used as the foundation for true French pastries
