Mocha Sponge


a tablespoons gelatine

1 and 3/4 cups strong coffee (hot)
1/4 cup cold water

3/4 cup sugar

3 eggs whites

Soak gelatine in cold water five minutes and add to hot coffee; then add sugar. Strain into pan, set in larger pan of ice water, cool slightly and when it begins to harden beat with egg beater until quite stiff. Add whites of eggs, beaten until stiff and continue the beating until mixture will hold its shape. Turn into a mold, first dipped in cold water. Chill thoroughly, remove from mold and garnish with whipped cream.
