Parker House Rolls
1 yeast cake dissolved in 1/4 cup lukewarm water
cups scalded milk 5 tablespoons shortening
Put shortening, sugar
and salt in bowl and pour milk over them. Cool and add yeast cake
dissolved in water and the well-beaten egg. Add enough flour to make a
stiff batter and beat thoroughly, continue adding flour to make a stiff
dough and knead on a well-floured canvas for several minutes. Put in a
well-greased bowl and let rise until double in bulk. Knead and roll out
to one-third inch thickness. Shape with cutter, first dipped in flour.
Brush over one half of each piece with melted shortening, fold and press
edges together. Place in greased pan, one inch apart, cover, let rise
until double in bulk and bake in a 400 degree oven.
