This chickpeas salad is very easy to prepare. Chickpeas are very used in Tuscanybut you will also find them a lot in Ligurian recipes and than also in Southern France where you have the delicious socca very popular in Nice ,a sort of flat bread made with chickpeas flour and olive oil.
My favorite way of eating chickpeas is by cooking them in oil with rosemary and garlic.
As the days are getting wormer i propose this fresh tasty Tuscan salad which is very easy to prepare and does not require cooking.
A small can chickpeas beans about 8 oz, 1 tablespoon chopped onion, 1 minced clove garlic, 1 small chopped tomato, chopped, 1/4 cup chopped parsley, 1 tablespoon olive oil, 1 teaspoon lemon juice, salt and pepper.
The secret for a good taste is to wash the chickpeas beans with cold water. This way they will loose the horrible can taste.
Mix all the ingredients together and if possible make it stay for two hours.
With a drop of traditional balsamic vinegar you will give a final touch of class.
