CUCUMBER BASKETS 

SIX PORTIONS

 

An attractive salad for a luncheon which features green as the predominating color.

Six cucumbers

One-half cup diced cooked carrots

One-half cup diced celery

Two level tablespoons chopped pimientos

Two level tablespoons chopped green peppers

One cup Mayonnaise Supreme

Six pieces parsley

Six pieces lettuce

RECIPE

Wash and peel the cucumbers and fashion into basket shapes, by cutting out the insides and leaving a handle in the cucumber. This is not difficult if care and as sharp knife are used. The basket should stand upright. Mix the carrots, celery, pimientos, green peppers and half the mayonnaise. Fill the baskets.

Place the rest of the mayonnaise on top, and place the parsley in the mayonnaise. Serve on a platter garnished with the lettuce leaves.
